Guinesss Draught Onion Soup with Irish Cheddar Toast

Serves: 4


  • 3 Tbsp butter
  • onions (about 1½ lbs), thinly sliced
  • Sea salt and black pepper, to taste
  • 2 Tbsp all-purpose flour
  • 1 tsp fresh thyme leaves
  • quart beef stock
  • 1 cup Guinness Draught Stout
  • Dash Irish whiskey (optional)
  • thick slices baguette
  • 1 Tbsp Dijon mustard
  • 1 cup grated Irish cheddar cheese



  1. In a large heavy-bottomed saucepan over medium-low, melt butter. Add onions; season well with salt and pepper. Cook, stirring often, 1 hour or until onions are soft, sticky and deep brown. Stir in flour and thyme. Cook, stirring 3–4 minutes.
  2. Whisk in stock and stout. Increase heat to medium-high; bring to a boil. Reduce heat to medium-low; simmer 1 hour. Stir in whiskey, if using; season with salt and pepper to taste. (Make soup up to 2 days ahead; cool and refrigerate.)
  3. Preheat broiler to high.
  4. Spread baguette slices with mustard. Ladle soup into 4 ovenproof bowls. Top each with 1 slice baguette. Sprinkle evenly with cheese. Broil 4–5 minutes or until bread is toasted and cheese is melted and bubbling. Serve immediately.
